We created this mermaid smoothie with pineapple and coconut to taste like a beach getaway. The blue comes from spirulina, an algae packed with vitamin B-12 and protein. Serve as smoothie bowl with desired toppings or just drink from a cup! Serves 1.
- 1 Cup Unsweetened Coconut Milk (or other non-dairy milk)
- 1 Frozen banana
- 1/2 Cup frozen or fresh pineapple
- 1 Tbsp coconut yogurt
- 1 Tsp blue spirulina
- Toppings (optional): Fruit, nuts, seeds, shredded coconut, etc.
1. Add all ingredients to a blender and blend until smooth.
2. Serve immediately! If making a smoothie bowl, serve in bowl and smooth out top before adding desired toppings.
